Growing up, my grandfather was my best friend, and he would always take me and my brother out to eat…anywhere we wanted to go!
One of our favorite spots was Lui’s Lui’s - a classic large Italian joint that served noodle soup to absolutely DIE for. Think big fat tender rigatoni with steaming broth and a very light and lemony cream sauce. Something about it was just so comforting and I probably ate that one dish over 40 times.
Our Lemon Parmesan Noodle Soup is an ode to those simple yet perfect Italian meals. Curly noodles swim in a creamy broth made from parmesan, ricotta, and roasted fennel, balanced with pops of cherry tomatoes and a big squeeze of bright, citrusy lemon to top it all off!
