First, a confession: we love chowder, like, a LOT. Sadly we just couldn’t find a plant-based chowder out there that reeeeally hit the spot, so we got to cookin’!
Our corn chowder is completely 100% plant-based without sacrificing on the heartiness of a classic chowder. We added coconut milk for the perfect creamy base, yellow corn kernels for delightful pops of sweetness, chunks of Yukon gold potatoes for heartiness, and finished it off with a squeeze of fresh lime for a refreshing zing! A perfect sunny bowl of soup.
