Heat a few tablespoons of oil in a large skillet over medium-high heat.
Place a heaping tablespoon of black beans in the center of each tortilla and top with cheese. Roll up tightly and place seam down in the oil. Pan fry for a few minutes, until the seam side is golden brown and sealed. Flip and cook for a few more minutes on each side, until golden brown and crispy.
Repeat and serve with desired toppings - guacamole, sour cream, salsa, you name it! Easy peasy!
